Natural colours are colours that have been derived from agricultural or biological materials using conventional methods and do not require certification.

How do you select the natural colour that will work for you?

In selecting a natural colorant for your food product there are a variety of parameters you need to consider. After you identify your shade requirements you will need to answer the following questions in order to identify the proper colour for your application.

  1. What form will work best in your product and process; powder, liquid, dispersion, paste, suspension, emulsion?
  2. Does the product require a water soluble, oil soluble, or emulsion as colourant ?
  3. What are the processing conditions? Some natural colourants are heat sensitive while others require a minimum of stirring to reduce oxidation.
  4. What is the pH of the final product? pH can be critical when selecting the correct natural colour. Note that the colour itself may also change the product's final pH.
  5. What are your shelf life expectations? Shelf stability varies from colour to colour. In some cases a shelf life may be improved by the type of packaging used.
  6. Do you need a Kosher product ?
