What are Lakes ?

Lakes are the water insoluble form of food colour dyes made by extending the dye onto an aluminum hydroxide substrate.

Where should I use them?

Lakes can be used in a variety of applications where little or no moisture is available including, crystal beverages, coated confections, hard candies, oil-based coatings and fillings, coated tablets, spice mixes and chewing gums.

What shades are available?

The following Primary Lakes are available for use in both Canada and the USA.

What are Lake Dispersions?

Lakes can be dispersed into a variety of Liquids for user convenience. Depending on the application they are available in the following vehicles:

• Vegetable Oil - compound coatings , icings
• Glycerine - confections, gums
• Sucrose - panned confections, pharmaceuticals
• Propylene Glycol - confections
• Sorbitol - sugar free confections
