Calico Food Ingredients is pleased to introduce Raven Manufacturing, producers of Crackling Candy™ , to Canadian Food manufacturers. Crackling Candy™ is an interactive food designed to provide an effervescent crackling/popping sensation when consumed.

Crackling Candy™ is effectively carbonated hard candy granules in which carbon dioxide has been entrapped in the hard candy matrix. The entrapped gas is released when the candy is exposed to moisture giving the fizzing and crackling sensation kids love. Although the product can be consumed as is, our aim is to offer it as an ingredient or an inclusion in other food items.

When considering the applicability of Crackling Candy™ for your product there are some considerations to keep in mind.

Moisture - since the product is a hard candy it needs to be protected from excessive moisture. Raven Manufacturing has developed a fat enrobed Crackling Candy™ to reduce the effects of moisture in some applications. Call us to discuss packaging and product options.

Heat - Crackling Candy™ can withstand higher levels of heat for short time periods but will begin to deteriorate if the heating is excessive or the hold time is relatively long. Our technical people can advise you about the optimum processing conditions and work with you to develop a practical manufacturing method.

Pressure - Crackling Candy™ is an amorphous "glass" type product. As a result it is relatively friable and pressure will release the gas bubbles. We can advise you as to the best handling methods to incorporate Crackling Candy™ into your product.
